Method
Step 1
To begin creating the cheesecake, weigh out 30 grams of unsalted butter. Place the butter into a small or medium pan.
On medium heat, warm the butter until it is completely melted. Mix the butter with a cooking spoon, and leave to the side
Step 2
Put a large oat cake and a digestive biscuit into a plastic food bag. Ensure the food bag is closed. Using a rolling pin, crush the biscuit combination into crumbs. Spoon an equal amount of the biscuit crumbs into two ramekins.
Step 3
Using a serving spoon, add the melted butter to each of the ramekins. Using a smaller spoon, mix in the butter until there are no dry biscuit crumbs left and pat the biscuit mixture down to form an even biscuit base. Set the ramekins aside. Now, rinse the raspberries with cold water to clean them
Step 4
Weigh out 197 grams of cream cheese. Add two teaspoons of icing sugar to the bowl.
Add two teaspoons of vanilla extract to the bowl. Using an electric whisk on the lowest setting, whisk the contents of the bowl together into a smooth cheesecake mixture.
Step 5
Weigh out 70 grams of the washed raspberries. Roughly cut the raspberries into halves and quarters. Using a spatula, add the raspberries to the cheesecake mix. Lightly fold the raspberries into the mixture, until all the raspberries are coated.
Finally ...
Using a tablespoon, spoon the cheesecake mixture into the ramekins, on top of the biscuit base. Refrigerate the cheesecakes for at least two hours. To serve, leave the cheesecake as they are. Or top with extra whole raspberries and even a drizzle of honey.
